I definitely feel your pain with dough making as well...it's a bitch. Just can't ever get it to do right...but again I'm not working with it often either. I freaking hate it. My family all take turns trying to get it spread out .. always ends up the 3 of us grabbing edges and stretching it out then the damn holes show up and you have to start all over

Im excited about this detroit style .. seems alot easier if I just need to spread it over the bottom of a deep pan vs a scorching hot pizza stone
