I smoke ribs all the time. I would suggest a sweet wood like apple or cherry when doing ribs as it leaves a nice flavor. I use a dry rub, then smoke for 4 hours at 200-225 temp. The last hour I use a sauce and cover them about every 15 minutes and this works very well. Fall off the bone goodness every time.
