That all depends.. if your boat actually sank I'd have to question your choice of boats, most boats can be righted and even filled with water, can hold occupants. Are you alone? Is the boat fully sunk? Can you not climb on top of it?
The timing really depends on what you do during that time. The best bet would be to adopt a defensive position. The more effort that you exert the quicker you will lose heat, this includes treading water, etc.. the body will lose heat something like 30 times faster in water than by surrounding air, so preserving your body heat would be a key towards longtime survival and trying to stave off hypothermia
