In Germany or Austria it´s mostly "open field but a roof over the stands". For examples, please google Fritz-Walter-Stadion or Allianz-Arena.
So, basically, you still have the weather influencing the game as it should be for an outdoor sports but the fans are at least dry even when it´s raining.

I hadn't really thought about it before but you're right, us Europeans do like a bit of shelter from the elements. I remember my trip to RFK in '94 and not being conscious of sitting in the sun for 3 hours; nice touch of sunburn afterwards

As to the advantage I'd suggest cold region stadiums probably see more home field advantage against warm region teams than not. i.e. It doesn't seem to impact the Bills v Patriots results as much!
