Ive been getting into roasting chickens lately. Fun little thing to throw in the oven on a lazy Saturday or Sunday. First you have to find a bird around 4 lbs, which is actually kinda hard. You have to get them mid week bc by the weekend its 6 lbs birds only. Brining process. Did just a salt brine, no water, this weekend and that is def the way to go vs the salt bath brine. experimenting with seasoning mixes, lemons, garlic butter etc For like $6 you get this incredible looking bird that feeds the whole fam, looks great putting a whole crispy bird on the dinner table then carving that bitch like a Norman Rockwell painting ... then left over sandwhiches the next day or chicken quessadillas. |

I also bake my bacon, although it's better fried. I don't do any frying in my house.

Switching gears here, gonna go pick up a pound of wisconsin brick cheese after work so I can make [URL="https://media1.fdncms.com/metrotimes/imager/u/original/20467305/detroiter_and_beer.jpg"]this[/URL] this weekend. It's been 6 months since I had a homemade Detroit style. I legit used to order a LB off Amazon but they charge almost 10 for the cheese and 14 for the shipping - just found a small cheese store in Alexandria that supposedly stocks wisconsin brick cheese - which is an essential ingredient to the pie.
