The RT we need to focus on ih the draft this year is Menelik Watson from Florida St. Dude is 6'6 320 and has the best feet in the draft, and get this, is projected to run a 4.7 40!! Holly crap this dude screams ZBS and might just be as much or more athletic than Trent. He is raw as a mug but has a crazy work ethic and will not only succeed but dominate at the next level. Id take him with our first pick but he might also be available in the 3rd. Here is a good link, i highly recomend you also click on the small "clips" icon right over his first paragraph.

Sadly most of the good players from the SEC are juniors.

Since I don't really follow college like I used to, any potential mid to late round legit playmakers we could use as a 3rd down back as a nice threat out of the backfield?

It would definitely be nice to have a Randall Cobb-type of player. Someone to use like we used Brandon Banks earlier in the year, but, you know, isn't Brandon Banks...

I think there are some decent mid-to-late prospects for that role. Here are a few:
Kenyon Barner (Ore)
Joseph Randle (Ok St)
Dennis Johnson (Ark)
Chris Thompson (FSU) could probably be had late. He is a big play threat but he has had two very serious injuries in college (ACL in mid-season 2012).

I liked what I've seen out of Barner when I watched Oregon games.

Haven't seen Dennis Johnson (or Chris Thompson for that matter) but Kenyon Barner is a speedster and Randle is a Great change of pace back from Morris.
