Is there anything better than fish tacos? I just had some for dinner tonight.

I'll have to say after my dinner tonight fiish tacos are a strong second. How do you cook and make yours?

I use tuna and blacken it with House Bayou Blackening Spice. We just use the mild Salsa from Harris Teeters, cheese, and my wife makes up some sour cream stuff. We also use shreaded cabbage which gives them a nice
crunch.

This is the blackening spice we use its the best I have found which I think you can also get at Harris Teeters.

A little blackening seasoning is the way to go. I chopped up a gorgeous orange bell pepper last night with my scallop tacos- gave it some great crunch. I'm also a fan of fresh avocado/guacamole on my tacos, and cilantro and lime are also a must. Some fresh pico de gallo never hurts either.

Never had scallop tacos. If like blackening spice find that bayou blend I posted.

I cheat and get them out. A local spot we go to has them for a special once a week on Tuesday nights. Haven't tried making them at home.

grew up on the gulf coast, blackened fish is the way to go

Love all sorts of fish and fish tacos.. everything from with baked with citrus salsas, blackened, fried fish... whatever

For what it's worth. I was asking some of the guys behind the seafood counter at Wegmans for some advice. They told me to pick up some searing flour (Wegmans Flour, Pan Searing | Wegmans (http://www.wegmans.com/webapp/wcs/stores/servlet/ProductDisplay?langId=-1&storeId=10052&catalogId=10002&productId=359393)) and give that a try. I really suggest it, especially Wegmans brand if you have one nearby. It creates an awesome golden brown crust that is light and flaky. Did Scallops and asparagus with it, both were awesome.

I have a few friends that tried fish when I made it with that stuff. They all have their own bottle at home now.

That is good stuff, do a egg wash first then dip it in the Wegmans stuff, comes out great.

I usually fry tilipia in it.

Nice catch FD. You said you went off coast...when do strippers that size come into the bay? Also what whales were you seeing off coast?
